Hey! Its Ry again, back with another one of my recent favorite meal ideas. Guess what’s making a triumphant comeback in your kitchen? The good old, classic breakfast burrito!

That’s right… you heard it here first. Breakfast Burritos are back, baby, and they’re here to kickstart your mornings with a flavorful fiesta! It’s like bringing a mini food festival to your breakfast table, and it’s high time for the reunion. Imagine wrapping up all your favorite breakfast ingredients in a warm, comforting tortilla blanket. Eggs, crispy bacon, gooey cheese, and zesty salsa are all invited to this breakfast bash!

I know it may sound complicated… but don’t you worry; these burritos are way easier to make than you’d think. I’m confident they’ll have you savoring the joy out of each and every bite. Tasty Breakfast Burrito

  1. Cook the Bacon: Place bacon (I go for 2 strips) onto a plate, cover with a paper towel, and cook in the microwave 1-2 minutes until desired crisp. If bacon in the microwave weirds you out, click here for how to make it in an air fryer or here for how to make it on the stove.
  2. Prepare the Eggs: Heat up a pan with a touch of olive oil or butter. It should sizzle when you flick a drop of water onto it. Crack the eggs into the pan and season with a pinch of salt and pepper. Cook the eggs to your desired level of doneness. For a classic breakfast sandwich, you can cook them sunny-side-up or over-easy, leaving the yolks runny. If you prefer scrambled eggs, whisk the eggs in a bowl and scramble them in the skillet
  3. Warm the Tortilla: Heat the flour tortilla in a microwave for about 10-15 seconds or until it’s warm and pliable.
  4. Assemble the Burrito: Place the scrambled eggs in the center of the warmed tortilla. Sprinkle the crumbled bacon and shredded cheese evenly over the eggs.
  5. Fold and Roll: Fold in the sides of the tortilla, then roll it up from the bottom, tucking the ingredients inside, to create a burrito shape.
  6. Serve: Your simple and satisfying breakfast burrito is ready to eat! You can serve it as is or with optional toppings like salsa, diced tomatoes, sliced avocado, or a dollop of sour cream.
  7. Enjoy your delicious homemade breakfast burrito filled with eggs, bacon, and cheese. It’s a quick and tasty way to start your day!

  • Gluten free? Use a GF English muffin.
  • Dairy free? Sub goat cheese OR use avocado instead of cheese.
