Ingredients

    For the Salad:

  • For the Dressing:

Instructions

    Cook the Noodles

  1. Bring a pot of water to a boil and cook the noodles according to the package instructions until they are al dente.
  2. Drain the noodles and rinse them under cold running water to stop the cooking process.
  3. Toss the rinsed noodles with a bit of sesame oil to prevent sticking, and then set them aside to cool.
  4. Prepare the Ahi Tuna:

  5. Season the ahi tuna steaks with a pinch of salt and black pepper.
  6. Heat a non-stick skillet or a grill pan over high heat.
  7. Add a touch of oil to the skillet, and when it’s hot, sear the tuna steaks for about 1-2 minutes on each side. The goal is to sear the outside while keeping the inside rare or medium-rare, depending on your preference.
  8. Once seared, remove the tuna from the heat and let it rest for a minute. Then, thinly slice it.
  9. Prepare the Dressing:

  10. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced garlic, grated ginger, and optional red pepper flakes or Sriracha for a bit of heat. Adjust the seasoning to your taste.
  11. Assemble the Salad:

  12. In a large bowl, combine the cooked and cooled noodles, mixed salad greens, cucumber slices, and julienned or grated carrot.
  13. Add the Ahi Tuna:

  14. Arrange the sliced seared ahi tuna on top of the salad.
  15. Drizzle with Dressing:

  16. Drizzle the dressing over the salad and tuna. You can use all the dressing or adjust the amount to your preference.
  17. Garnish and Serve:

  18. Garnish the salad with chopped cilantro or parsley and sesame seeds if desired.
  19. Serve Cold:

  20. This salad is best served chilled.
  21. Enjoy your simple and refreshing Cold Noodle Salad with Seared Ahi Tuna! It’s a delicious and satisfying meal, perfect for a light lunch or dinner.
