Baked oats are a fun way to switch up your usual bowl of oatmeal and a cool way to play around with texture! I like my baked oats to be a bit underbaked and gooey, but you may find that you like more of a solid cake-like consistency. Neither are right or wrong, so play around with the timing in the oven to find the texture profile that works best for YOU!

Today I’m serving up a perfect snack or breakfast option for the summer! Not only are blueberries in season during these warm months, but something about a blueberry muffin or pastry screams summer to me. Anyone else? If so, I’m glad you’re here because you’ll appreciate this simple and delicious blueberry muffin baked oats recipe!

Ingredients

Instructions

  1. blend all your ingredients minus the blueberries together
  2. pour batter into an oven-safe bowl
  3. mix blueberries in to batter
  4. top batter with a few more blueberries
  5. bake at 375 F for about 22 minutes
  6. let cool and enjoy!

Notes

  • Serve with nut butter and a splash of milk for added flavor and moisture!
