It’s Ry again! Back again with another delish meal idea for you to try out this week. Today, we’re doing a strawberry chicken salad with some of my favorite add-ins!

Say hello to my current salad fixation: tender, juicy chicken paired with succulent strawberries, a sprinkling of your favorite cheese, and a delightful crunch of pecans. YUM. Every forkful is a dance of flavors that’ll have you craving more. Get ready to enjoy a salad that is not only delicious but will keep you full for more than 30 minutes (because we like salads that keep us full here 😉) 🍓🥗.

Also, to those who may be thinking this… Heck no, fruit in salads isn’t just a ‘summer thing!’ Or I should say, it doesn’t have to be! I love enjoying this meal all year round, and know that you will too. Especially on those days when you want to throw something together quickly and easily, without sacrificing flavor or satiety.

Strawberry Chicken Salad with Blue Cheese and Pecans

Description

Say hello to my current salad fixation: tender, juicy chicken paired with succulent strawberries, a sprinkling of your favorite cheese, and a delightful crunch of pecans. YUM. Every forkful is a dance of flavors that’ll have you craving more. Get ready to enjoy a salad that is not only delicious but will keep you full for more than 30 minutes (because we like salads that keep us full here 😉) 🍓🥗.

  1. Toast the Pecans: Place the pecan halves in a dry skillet over medium heat. Toast them for 2-3 minutes, stirring frequently until they become fragrant and slightly golden. Remove from heat and let them cool.
  2. Assemble the Salad: In a large salad bowl, combine the mixed greens, sliced strawberries, cooked chicken, crumbled blue cheese, and toasted pecans.
  3. Dress the Salad: Drizzle the prepared dressing over the salad. Start with a portion of the dressing and add more as needed, depending on your taste. Toss the salad gently to evenly coat all the ingredients with the dressing.
  4. Serve: Serve immediately with a slice of fresh french bread and enjoy!
